We will go to a place in the Farum area. There is an abundance of sweet cicely, and we will harvest a couple pieces of their roots. It is nice baked in a bread, giving the bread a subtle menthol-like flavor. It is also great dried as a tea.
Fermented it gives you a delicate meat-like ingredient. I have only started experimenting with this last Spring. It goes well, where others would use meat. Maybe sliced thinly and in your burger?
This event is about harvesting the root, primarily. But, if you are up for it, and we all feel we have time for it, we may also ferment it at Bioteket. Bring a 500ml jar, if this sounds good to you.
You should bring a bike. Even though we take the S-Train to Farum, it is still a short bikeride from there.
See you on Tuesday. 😀
